2/13/2013 - Dough opens in North Asheville today

Ask Chef Brian Ross to describe Dough, and you're likely to get a couple of different answers.
"We've been describing it as a 'chef-driven market,' but a lot of people don't really know what that means," Ross said last Tuesday night during a soft opening of his new shop at 374 Merrimon Ave., the former site of the once-popular Compliments to the Chef kitchen store.
The tagline simply means that Ross is using his expertise to whip up delicious grab-and-go foods, offer a handpicked selection of wines and ingredients and shape a minicurriculum for the cooking classes he plans to offer. Keep prodding Ross, and he'll note that he'll be providing "good food that's prepared well," which was evident Tuesday night. Ross had wide selection of delicious food laid out for tasting -- everything from matzoh ball soup and paella to empanadas. The pre-made food is all set for anyone to take home or taste at a few tables set up inside the store.
Ross also says he's a "purveyor of fine food," and that's evident in the selection of ingredients he has on his shelves. There's a small selection of wines, as well as everything from saffron powder to dried meats.
If you want to learn how to put all those great ingredients together, Ross will help there, too. He said Tuesday he's finalizing his cooking class schedule. The shop opens Feb. 12. www.doughasheville.com.
